كشفت نتائج أولية لدراسة فرنسية عن ارتباط ارتفاع استهلاك مركب يوجد بصورة طبيعية في اللحوم الحمراء بزيادة خطر الإصابة بالسكري من النوع الثاني بنسبة تصل إلى 63%.

وركز الباحثون على مركب «حمض N-غليكوليل نيورامينيك»، المعروف اختصاراً بـ«Neu5Gc»، وهو أحد أنواع السكريات التي تنتجها غالبية الثدييات بصورة طبيعية، بينما فقد الإنسان القدرة على إنتاجه نتيجة طفرة جينية قديمة.

ويوجد المركب بشكل خاص في اللحوم الحمراء، ولا سيما لحوم الأبقار والأغنام، فيما يوجد بكميات أقل في منتجات الألبان.

وتابع الباحثون على مدى أكثر من سبع سنوات العلاقة بين استهلاك «Neu5Gc» والإصابة بالسكري، ضمن دراسة «NutriNet-Santé» الفرنسية الواسعة التي تبحث العلاقة بين النظام الغذائي ونمط الحياة والصحة.

وبلغ متوسط أعمار المشاركين في الدراسة 42 عاماً، وشكلت النساء 79% منهم، ولم يكن أي من المشاركين مصاباً بالسكري من النوع الثاني أو السرطان عند بداية الدراسة.

وسجل المشاركون الأطعمة التي تناولوها خلال ثلاثة أيام، واستخدم الباحثون هذه البيانات لتقدير كمية «Neu5Gc» التي استهلكوها يومياً. وخلال فترة متابعة بلغ متوسطها 7.2 سنوات، سجلت 966 حالة إصابة جديدة بالسكري من النوع الثاني.

وقسم الباحثون المشاركين إلى خمس مجموعات وفقاً لمستويات استهلاكهم للمركب المستمد من اللحوم، وأظهر التحليل أن أفراد المجموعة الأعلى استهلاكاً كانوا أكثر عرضة للإصابة بالسكري بنسبة 63% مقارنة بالمجموعة الأقل استهلاكاً.

واستمر هذا الارتباط بعد أخذ عوامل أخرى في الاعتبار، من بينها العمر والجنس والنشاط البدني وجودة النظام الغذائي والتدخين والحالات الصحية الأخرى، كما ظهر لدى الرجال والنساء على حد سواء.

وفي المقابل، لم يرصد الباحثون ارتباطاً بين «Neu5Gc» المستمد من منتجات الألبان وزيادة خطر الإصابة بالسكري، بينما ارتبط ارتفاع إجمالي استهلاك المركب من جميع المصادر الغذائية بزيادة الخطر بنسبة 37%، وكان هذا الارتباط مدفوعاً بدرجة كبيرة بالمصدر المستمد من اللحوم الحمراء.


وأوضح الباحثون أنه عند تناول أطعمة تحتوي على «Neu5Gc»، يمكن للجسم امتصاص المركب ودمجه في أنسجته. ونظراً إلى أن جسم الإنسان لا ينتجه بصورة طبيعية، يتعامل الجهاز المناعي معه باعتباره مادة غريبة وينتج أجساماً مضادة ضده.

ويرى الباحثون أن هذه الاستجابة قد تؤدي إلى التهاب مزمن، ما قد يفسر جزئياً العلاقة التي رصدتها الدراسة بين استهلاك المركب والإصابة بالسكري من النوع الثاني.

وقال الباحث الرئيسي الدكتور ليوبولد فيزو، من جامعة السوربون باريس الشمالية في بوبيني بفرنسا، إن النتائج تدعم فرضية أن الالتهاب المزمن قد يمثل إحدى الآليات التي تربط بين استهلاك اللحوم الحمراء والسكري من النوع الثاني.

وأشار إلى الحاجة لمزيد من الدراسات لتحديد ما إذا كان «Neu5Gc» نفسه مسؤولاً عن هذا الارتباط، أم أن مكونات أخرى موجودة في اللحوم الحمراء تسهم فيه.


وشدد الباحثون على أن النتائج لا تثبت أن المركب يسبب الإصابة بالسكري، نظراً إلى أن الدراسة رصدية، فضلاً عن أن النتائج لا تزال أولية وقد تتغير بعد اكتمال التحليل.

ورغم أخذ عدد من عوامل الخطر في الاعتبار، لم يتمكن الباحثون من استبعاد تأثير عوامل أخرى مرتبطة بنمط الحياة والظروف الاجتماعية، إضافة إلى احتمال تعرض تقديرات استهلاك «Neu5Gc» لبعض أخطاء القياس لاعتمادها على السجلات الغذائية.

ويعتزم الباحثون مستقبلاً قياس الأجسام المضادة لـ«Neu5Gc» بصورة مباشرة، ودراسة علاقته بمكونات أخرى في اللحوم الحمراء، من بينها حديد الهيم، لاختبار الآلية المقترحة وفهم العلاقة مع السكري من النوع الثاني بصورة أدق.

Preliminary results from a French study revealed a link between increased consumption of a compound naturally found in red meat and a 63% higher risk of developing type 2 diabetes.

The researchers focused on the compound "N-glycolyl neuraminic acid," commonly abbreviated as "Neu5Gc," which is a type of sugar produced naturally by most mammals, while humans have lost the ability to produce it due to an ancient genetic mutation.

This compound is particularly found in red meat, especially beef and lamb, while it is present in smaller amounts in dairy products.

The researchers tracked the relationship between Neu5Gc consumption and diabetes incidence over more than seven years, as part of the extensive French "NutriNet-Santé" study that investigates the relationship between diet, lifestyle, and health.

The average age of the study participants was 42 years, with women making up 79% of the group, and none of the participants had type 2 diabetes or cancer at the beginning of the study.

The participants recorded the foods they consumed over three days, and the researchers used this data to estimate the amount of Neu5Gc they consumed daily. During a follow-up period averaging 7.2 years, 966 new cases of type 2 diabetes were recorded.

The researchers divided the participants into five groups based on their levels of meat-derived compound consumption, and the analysis showed that individuals in the highest consumption group were 63% more likely to develop diabetes compared to the lowest consumption group.

This association persisted after accounting for other factors, including age, gender, physical activity, diet quality, smoking, and other health conditions, and was observed in both men and women.

In contrast, the researchers did not find an association between Neu5Gc derived from dairy products and an increased risk of diabetes, while higher overall consumption of the compound from all dietary sources was linked to a 37% increased risk, largely driven by the meat-derived source.


The researchers explained that when consuming foods containing Neu5Gc, the body can absorb the compound and incorporate it into its tissues. Since the human body does not produce it naturally, the immune system treats it as a foreign substance and produces antibodies against it.

The researchers believe that this response may lead to chronic inflammation, which could partially explain the relationship observed in the study between compound consumption and type 2 diabetes incidence.

Lead researcher Dr. Leopold Fezeu from the University of Sorbonne Paris Nord in Bobigny, France, stated that the results support the hypothesis that chronic inflammation may represent one of the mechanisms linking red meat consumption to type 2 diabetes.

He noted the need for further studies to determine whether Neu5Gc itself is responsible for this association or if other components present in red meat contribute to it.


The researchers emphasized that the results do not prove that the compound causes diabetes, as the study is observational, and the findings are still preliminary and may change after the analysis is completed.

Despite considering several risk factors, the researchers could not rule out the influence of other lifestyle and social condition-related factors, in addition to the possibility that estimates of Neu5Gc consumption may be subject to some measurement errors due to reliance on dietary records.

In the future, the researchers intend to measure antibodies to Neu5Gc directly and study its relationship with other components in red meat, including heme iron, to test the proposed mechanism and understand the relationship with type 2 diabetes more accurately.
